Banana Bread With Tasty Twists!


You know me. I just can't leave a recipe alone. If it says one thing then I'm digging in the cupboards figuring out what else I can dump in there.

Well I sure came up with a winner and here it is!!


Banana Nut Bread With My Extra Goodies!


1/4 Cup Butter
1/2 Cup Sugar
2 Eggs
1 1/2 Cups Very ripe bananas, mashed
(here's where you can start adding stuff)

1/2 to 1 Cup Frozen Cranberries
1/2 to 1 Cup Raisins
1/2 to 1 Cup Pecans, chopped if you wish
okay, back to recipe

1/2 Teaspoon of Pure Vanilla
1 1/2 Cups White Flour or Whole Wheat
1/2 Tsp Salt
1/2 Tsp Baking Soda

preheat oven to 350 degrees F.
Beat butter with sugar and honey in the bowl of an electric mixer until light and fluffy.
Add eggs one at a time, beating well after each addition.
Stir in mashed bananas, mixing well. Stir in vanilla
Whisk together flour, salt, baking soda and stir into batter.

Stir in nuts, cranberries, raisins and whatever else you think would be good.
Brush loaf pan with butter or spray with non stick cooking spray and dust with flour.
Bake for 1 hour or until knife inserted in center comes out clean. Allow to cool in pan 5 minutes before serving.

Let's get this in a pan now!
Chicken of course,snow peas,zucchini,fresh carrots green peppers,one small jalapeno,red onions,fresh garlic,pine nuts and to give it a lil zest,sazon(con azafron) Oh...and a partridge in a pear tree!!!!!I put a lil olive oil in to start...put about half cup water in after gets nice and hot, put lid on and steam the heck out of everything till nice and tender. I put the red onions in after done because my sweetheart likes them that way. Yummy!

Let's Have Some BlackBerry Pie!!










Simple to make and fast too!

Ingredients
  • 4 cups fresh blackberries
  • 1/2 cup white sugar
  • 1/2 cup all-purpose flour
  • 1 recipe pastry for a 9 inch double crust pie
  • 2 tablespoons milk
  • 1/4 cup white sugar

Directions

  1. Combine 3 1/2 cups berries with the sugar and flour. Spoon the mixture into an unbaked pie shell. Spread the remaining 1/2 cup berries on top of the sweetened berries, and cover with the top crust. Seal and crimp the edges. Brush the top crust with milk, and sprinkle with 1/4 cup sugar.
  2. Bake at 425 degree F (220 degrees C) for 15 minutes. Reduce the temperature of the oven to 375 degrees F (190 degrees C), and bake for an additional 20 to 25 minutes.

Muffins Again??!!


MmM!

I'm having a cooking crisis with muffins! Can't get enough of them. Oh wow, these are so easy too.
Like Pumpkin? Cranberries? Raisins? Spice and nuts? Then there little gems are for you!
I like those little silicone mini muffin cup holders. Over time, you'll see a savings as well. No more paper cups and these don't stick!
Recipes say to measure dry and wet ingredients separate. Sometimes I just dump it all in the bowl and mix! Then start adding whatever looks good.
Here's todays recipe.
1/2 can pumpkin
2 eggs
1 1/2 cup sugar
1/3 cup of water
--------------------(if you must separate!!)-------------------
1 3/4 cup of flour
1 tsp soda
3/4 tsp salt
1/2 tsp cinnamon- I use more
1/2 tsp nutmeg - i use more
1/4 tsp cloves- yup I use more!
1/8 tsp ginger

Stir till pretty smooth.
Then add whatever you want! Today I added frozen cranberries, frozen blueberries, raisins and walnuts.
Pour into a greased bread pan and 12 little muffins cups.
Bake 350 till toothpick comes out clean.
YUM!!!!!!!!!!!!!!!!!

SIDENOTE: See that Gerber Daisy? It has Two Blooms On One Stem! Anyone ever see something like that before? Really cool!

Did Someone Say Muffin?


MmM, I tried these great muffins. Oh boy! These are great and easy to make too.






1cup Fiber One® original bran cereal
1egg
3/4cup fat-free (skim) milk
3tablespoons vegetable oil
1cup mashed ripe bananas (about 2 medium)
1 1/4cups Gold Medal® all-purpose flour
1/2cup sugar
3teaspoons baking powder
1teaspoon ground cinnamon
1/4teaspoon ground nutmeg
1/4teaspoon salt
1/2cup sweetened dried cranberries

1.
Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or use paper baking cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2.
In medium bowl, beat egg, milk and oil with fork or wire whisk until well mixed. Beat in bananas. Stir in crushed cereal; let stand 5 minutes.
3.
Stir in remaining ingredients except cranberries until blended. Stir in cranberries. Divide batter evenly among muffin cups.

Since I can't follow directions (or won't!), I omitted the dried cranberries and used
1 1/4 cup of frozen cranberries instead.
Then for fun I threw in extra stuff stuff.
some applesauce-maybe 1/4 cup
about a cup of walnuts
maybe 1/2 cup of pecans
1/2 cup of raisins or a little bit more
about 1/3 cup of f...rozen blueberries.
And!!!!! I didn't add that 1/2 cup of sugar in there. No One noticed. YUM and even 1/2 way good for ya. Lemme know if you try them.

Let's Grind Some Fresh Meat!


Grinding meat is so much easier than it used to be with the hand cranker. Now a days, you just switch on the Kitchenaide and away you go!

We like to use Chuck and Sirloin although cheaper cuts of meat work just fine too. I bet we've tried them all.

Try not to over work your meat, be quick and shape your patties gently. Season just a little bit, I like garlic pepper and chill the patties in the fridge while you're firing up the grill. No grill you say? No problem! Just pop them into any pan you have and use your stove! These burgers are a real treat.

Sometimes we even add onion or salsa to the meat mixture. You can add shredded cheese too.
That's what's so cool, they're easy and Hey
It's Just Food!

It's Just Food, Right?

Everyone Has To Eat
We might as well make it fun. It doesn't have to be gourmet or hard or even pretty. We've all rushed out the door and just grabbed Something just because.

How about making cabbage rolls ahead of time. They'll be ready to grab when You are. I like to cook off the cuff, no recipe-just whatever is on the counter.

So let's get some ideas here for a pan of cabbage rolls. Like you could....
Grill something or Fry or whatever. MEAT!!! Get Some Meat! I'll suggest any leftover! We used corned beef last week.

Okay, next! Potatoes, just threw a couple in boiling water until right before the soft stage. Don't want them too done or they'll fall apart. With skin or without, whatever you prefer. Then whatever else you want. Spices, chopped onion. I like those two things.

Don't be afraid! ha ha ha
Okay so now stick your head of Cabbage into a pot of boiling salted water for about 5 minutes. Drain and let cool. Peel back the leaves and one at a time put some of your Yummy Filling in the center of the cabbage leaf, then roll it up like an egg roll. I stick a tooth pick in mine when they're rolled so they don't fall apart.

Now if you wanted to, you could put all those into a casserole dish, sprinkle some cheese over it and even a can of chopped tomaotes. Bake at 350 until the cheese melts.

That's what's so cool about this dish! Don't be afraid to experiment. I found cabbage on sale at Nine Cents a Pound!! Look for bargains. Use them in creative ways. The corned beef came in at a mere 1.39 a pound!! Look for hamburger or sausage on sale too. Make it fun, Make it easy and Make it good!

Going through the fridge trying to come up with something new. MmM.
I think I have a winner. I used my pretzel recipe and added chopped pepperoni. Brushed the top with butta! Lots of butta!
